shrimp & good, ole fashioned, cauliflower grits
You asked, and I cannot deny you of it. I made a keto-friendly shrimp & grits, and I am not ashamed to show it!
The amount of cheese in this recipe may seem... dramatic. Nonetheless, I am proud of this delicious creation! It pains me to say that I didn't eat this entire thing in one sitting, instead I ever so kindly left half for my S/O, whom absolutely loathes cauliflower rice. While cauli-rice has been a staple in my diet long before I started keto, my boyfriend describes it as a regretful reminder of every healthy decision he should be making in his life.
But I knew he'd like this.
You are going to want a lot of butter and a LOT of cheese. To create this recipe post, I had to calculate this meal into my Carb Manager. Looking at the calorie count was not enjoyable.
I recommend trying to make this at least 4 servings and not 1, although a girl can want.
Ingredients:
2 tbsp Kerry Gold butter
3 garlic cloves, minced
1/2 - 3/4 cup Heavy Whipping Cream
Parsley flakes (go fresh if you are living your best life)
12 oz of Cauliflower Rice, I prefer Trader Joe's frozen
1lb of shrimp cut up into pieces
1/2 cup of shredded cheddar cheese
and SAY WHAT 1.5 cups of shredded Mozzarella*
Scallions to top it off
*BONUS: I did not calculate for this, but make your own bacon bits to garnish with or mix in!
*I used mozz! This is not common in grits, and if you hate it stick with cheddar, but I just looooove the creamy taste of mozzarella cheese and prefer it in almost anything! Also, add more if you are feeling cheesy... I made it with about 2.5 cups of mozz....... oh well!
Instructions:
When you start to cook, try to think of risotto. Slow and steady wins the race, here.
In a deep pan
Melt with butter and garlic on a very low heat
Stir in 1/2 cup of heavy whipping cream & parsley
Add salt & pepper (I always suggest seasoning throughout cooking & not just at the end, to really enhance the flavors)
Layer in your dethawed cauliflower rice and allow the mixture to coat it fully
If you need more heavy whipping cream add in a bit now
Allow the cauliflower to soak up the flavor for a few minutes
In a separate pan, begin to cook your shrimp about halfway through before mixing it into the rest of the dish. No one likes rubbery shrimp!
Add the shrimp and mix it in evenly
Sprinkle in your cheese, slowly

Stir
Stir, until that shrimp is cooked to perfection and you start getting too hungry to wait.
Top off with your garnish! Pictured below: scallions, fresh parmesan, minced onion, parsley!
