in a pan, stir fry 4 eggs, crumbled bacon & 1/2c cheddar/mexican blend cheese;
lay out 6 slices of ham and scoop even amounts of the mix into each slice;
roll them up and lay them next to each other in a baking dish
mix together 1/2c's of sour cream & salsa, pour on top
add shredded cheese & bake - 350 for 15 min
add more cheese if you wish & broil for 5 min!
thaw your desired amount of shrimp & prepare an egg wash
fill a small bowl with pork rinds and desired seasonings: (try creole)
dip your shrimp in the egg wash then cover it in your pork rind mix
lay out all shrimp in a pan and bake at 350F for 8 minutes
PAD THAI SAUCE
In a blender, blend:
2/3c peanuts &1/2c water
add 1tbsp of sugar or alt. sweetener
2 tbsp white vinegar
1 tbsp coconut aminos
(or soy sauce)
1 tbsp chili sauce
mix over noodles, meat & eggs.
garnish with scallions and chopped peanuts!
